In my kitchen: The broccoli soup

Lately, I don’t feel like eating meat. It just doesn’t taste like home. I’ve tried all different markets, fresh, frozen, you name it, but it just tastes weird, so I’m always on the look for healthy recipes without meat. So when I read this recipe at A cup of Jo I was sure I would make it sooner or later even though I don’t own a food processor.

Instead of using a food processor, I mashed everything with a spoon and it worked unexpectedly well. I served it with a salad with arugula (is this how you call it?), tomatoes and balsamic vinegar.

I try to keep it simple and fast when cooking and this is definitely a recipe that fits the bill. As a bonus, it is healthy and tasty. The bad news is that now I’m dying to try another version of broccoli soup with cream (and many more calories).

  1. Provencal vegetable soup and barley soup, both are great “what do I have on hand” meals. No barley, use rice or couscous, even small pasta. Want it heartier, add chicken. Use potatoes to bulk up, etc. Crusty bread completes the meal, and the barley soup freezes really well.
