I’ll start this post by admitting that I haven’t mastered the art of the blackened chicken. There’s definitely something I’ve been missing here. And the end result of this recipe is slightly different from what Jamie described in his book. So, this is probably not Jamie’s blackened chicken. This is a failed attempt of mine to make a blackened chicken.
Leaving aside that there have been more successful recipes in my repertoire, I wasn’t disappointed by this recipe. I love quinoa and I love grilled veggies, so there was no way I would be disappointed by it.
This quinoa salad is one of my favorite recipes of Jamie’s book, or of what I’ve tried so far. I know I am a bit biased, because I love salads and if I could I would eat salads every day, but honestly, this salad is delicious, with or without the chicken. I mean give me some mango, quinoa, feta cheese and grilled veggies and take my heart.
I could eat this for lunch every day, if there were any leftovers.
I don’t know what went wrong with the chicken. It should be considerably darker and it’s not. So something must have gone wrong, but I have no clue. I’ll try it again in the future and I’ll update if I figure it out.
All in all, this recipe was a success regardless of the chicken failure. Will I make it again? Definitely yes!
