By this time, you’ve probably noticed that if there’s something I don’t like in a recipe, I change it. It this case, in my house we don’t eat so much bread. Sometimes I like to bake my own bread and some weeks we pick up a fancy loaf, like delicious Danish bread, from the bakery, but most of the time we just don’t eat bread. So I had to interpret this sandwich recipe in some other way that would fit what we enjoy eating.
So, no baguette for this recipe. Instead I chose to eat it as a tortilla!
This recipe comes with a guacamole, something that I absolutely love eating. Avocados have a certain place in my heart and I am one of these weird people who like avocado chocolate pudding (it’s OK if you don’t, I understand!). Give me guacamole and steal my heart. This is a rich spicy recipe for guacamole, one of the best I’ve tried, if not the best one.
This guacamole suits the chicken breasts and the bacon really well. I served it as a make-your-own-tortilla dinner, with a salad that ended up going in the tortilla as well. It was one of the best tortillas I’ve ever tried. It’s on the top of my list along with these burritos.
All in all, this recipe quickly became one of my go to tortilla recipes and into the list of rotating recipes that I put in my weekly meal plan, especially for these weeks where I am drowned in work. Will I make it again? YES.
