I cheated again and made my own naad bread following this simple recipe. This naan bread was delicious. We kept the leftover dough wrapped in plastic in the fridge overnight and ate it for breakfast the next day with cheese and ham. But back to the curry…
This vegetarian soup is full of flavor and very healthy. It has lentils and spinach, ingredients which are both packed with iron. It’s one of these dishes that make you feel good afterwards. This salad accompaning this dish is a simple roasted tomato salad. Before trying it, I wasn’t a fan of roasted tomatos, but this is a perfect combination. I ate them on top of naan bread with yogurt and I added them in my soup and both options worked really well.
All in all, this is a recipe that I want to make again and again. Leftovers were perfect for next day lunch, which is always appreciated. Will I make this again? YES!
