This is a dish that I’ve already made twice! The first time was a huge success and the second time was not as perfect. So far, this is my favourite recipe from Jamie’s 15 minute meals.
Let’s start with the spinach-feta-chickpeas packages. These things are delicious! You mix all the ingredients for the filling in a food processor and you’re good to go. Be careful not to overmix the ingredients. I like to have some leftover texture. The second time I made them, I made that mistake and they weren’t bad, just not as perfect.
As far as the salad is concerned, this is not the typical Greek salad. At least it’s not what we call a Greek salad in Greece. Coriander was a bit too much for my taste, so I’d rather skip it, or better yet try an original Greek salad, which I think would suit this dish perfectly.
The best part about this dish is how it is served drizzled with some (lots of) honey and yogurt. I could eat this everyday. Will I make this again? YES, I already have!
