This was my second attempt in cooking lamb and it turned out delicious. It is very difficult to have anything wrapped in tortillas that is not delicious though. You can judge for yourself if you like.
The lamb was seasoned with cumin and smoked paprika and then mixed with walnuts. Walnuts were a surprising addition that I would have never thought on my own, but turned out a perfect match. The salad was filled with all sorts of nice stuff: spring onions, green pepper, cucumber coriander and salad leaves, dressed with olive oil and vinegar and served with feta cheese.
I made my own hummus (following this recipe). I loved it so much that I keep making it for my work lunches, served with crackers, avocado and bell peppers. Yum!
I served everything separately so that we could fill our own tortillas. This was one of my favourites from Jamie’s book. Will I make this again? Yes, definitely!
