It’s been a long time since I shared a favorite recipe and there’s a good reason for that. I’m a creature of comfort. I eat the same breakfast every single day, overnight oats with almond milk and banana. But sometimes it’s good to mix it up. Today I’m sharing two of my favorite fruity breakfasts. I hope you like them as much as I do. Oh and I forgot to mention, they’re from that old Jamie Oliver recipe book I’m trying to cook through.
This fruit salad is good to serve as dessert, when you have many leftover fruit that is about to go bad. Strangely enough this happens a lot in my house, especially now that I live alone. I like to have a variety of fruit to choose from, more than I can consume. So sometimes I have to get creative.Jamie’s fruit salad could also make a nice light breakfast if you’re into fruits for your first meal of the day. I’m not that much into that anymore, but I still like it as a snack or dessert. Will I make it again? Sure!
Cottage cheese is a great low-fat source of protein. I often prefer to eat some as a low-key snack in the office, but Jamie’s version is much more interesting and just as quick. Simply by adding few drops of vanilla extract and a bit of honey in your cottage cheese, you get the best treat for a sweet tooth. Top it with any fruit and nut combo of your choice. Yum!
